Formulation and additive manufacturing of polysaccharide-surfactant hybrid gels as gelatin analogues in food applications

A vegetarian alternative to gelatin, for use in food applications was proposed as a synergistic combination of 0–2 wt% low acyl gellan gum (LAG) and tamarind seed xyloglucan (TSX). The mechanical, thermal temperature-mediated release properties the gels were examined using rheology conductivity. influence addition grade emulsifier, Tween® 20, also investigated. It found that both total concentration biopolymers ratio polymer blends influenced (gelling melting temperatures) mechanical (storage modulus phase angle) properties, however major factor. 20 led small increases gelling temperatures, elastic reduction angle most LAG/TSX samples. Using rheological data samples predicted be printable extrusion-based additive manufacturing, which then performed on custom-made printer. suggested 0.5 LAG/1.5 TSX/1 similar tested sample 5 porcine gelatin terms viscoelastic moduli, & temperatures profile, could therefore developed replacement. No difference between moulded versus printed gels.
